Before DOWNTIME, we ran restaurants in Berlin. We know what guests rarely see: the decisions, routines, labour and relationships beyond the plate that hold a place together. DOWNTIME began in the quieter hours between services, when there was finally room to think about what a place could become. We explore hospitality as culture: how food, migration, identity and labour shape the places we share. The Journal follows those stories. The Studio brings that perspective into concepts, identities, images and objects for hospitality.
